Elevating Summer Flavors ☀️🍅 This unconventional twist on bruschetta by @lemongrovelane is a burst of taste and texture! From roasted cherry tomatoes to creamy burrata, all drizzled with homemade balsamic glaze, every bite tells a story of summer delight. 😍🌿

This is definitely not traditional bruschetta. Try it!

•One baguette
•Burrata cheese
•Fresh basil
•2 baskets cherry tomatoes
•Olive oil
•Balsamic glaze*

  1. Preheat oven to 400°F
  2. Line a baking sheet with parchment paper.
  3. Evenly spread tomatoes out onto baking sheet.
  4. Toss in olive oil and sprinkle salt.
  5. Roast tomatoes for about 30 minutes or until they are beginning to fall apart.
  6. While tomatoes are roasting, make your balsamic glaze. Recipe below.
  7. Remove tomatoes from oven when done.
  8. Slice baguette, brush with olive oil, and roast, until just starting to brown on the edges.
  9. Remove from oven. On top of roasted tomatoes, add around the cheese and fresh basil. Add balsamic glaze.
  10. Serve on freshly toasted baguette!

* balsamic glaze: poor about a half a cup of balsamic vinaigrette into a sauté pan. Add 2 tablespoons of honey or brown sugar. Reduce mixture to about 1/3. Pour over tomato mixture.
