Fried Feta Stuffed Olives

Golden, crunchy olives with a creamy feta surprise.

Ingredients

    jar pitted Halkidiki olives

  • 50

    g feta (cut into very thin matchsticks)

  • 50

    g plain flour

  • 1/2

    tsp dried oregano

  • 1/2

    tsp dried thyme

  • 1

    medium egg, beaten

  • 50

    g breadcrumbs

  • 350

    ml neutral oil (for frying)

  • Salt & black pepper

Inspired by Mediterranean flavors, these fried feta-stuffed olives are the kind of appetizer everyone gathers around.

STEP 1

Drain the olives well and pat them dry with kitchen paper.

STEP 2

Stuff each olive with a thin piece of feta.

STEP 3

In a bowl combine the flour with the oregano, thyme, salt and pepper. Beat the egg in a second bowl and place the breadcrumbs into a third.

STEP 4

Coat each stuffed olive in the flour, then the beaten egg and finally the breadcrumbs until evenly coated.

STEP 5

Heat the oil in a small saucepan or deep frying pan over a medium-high heat. Once hot carefully fry the olives in batches (2-3 minutes), until golden brown and crispy.

STEP 6

Remove with a slotted spoon and drain on kitchen paper before serving.
