Cooking Oil vs. Finishing Oil: What's the Difference?

Every dish needs the right kind of olive oil. Sometimes it’s there to bring everything together quietly, letting the ingredients take the lead. Sometimes it’s the finishing touch everyone notices first. Gratsi brings both to your kitchen with two early-harvest Greek Extra Virgin Olive Oils made for different moments.

Cooking Oil is a 100% Greek blend, smooth and balanced, built for heat: sautéing, roasting, baking, eggs on a Tuesday. Finishing Oil is single origin Greek Koroneiki, more aromatic and peppery, made for the last pour: salads, bread, anything that just came off the stove.

Extra Virgin Cooking Oil

Extra Virgin Cooking Oil

It begins with 100% Greek olives harvested in mid-November. Cold extracted and left unfiltered, they become a mild, smooth oil with a soft almond note, the one that holds up beautifully to the heat through sautéing, roasting, baking, eggs, and sheet-pan dinners.

What's the difference between Gratsi Cooking Oil and Gratsi Finishing Oil?

Cooking Oil is a 100% Greek blend, smooth and balanced, built for heat: sautéing, roasting, baking, eggs on a Tuesday. Finishing Oil is single origin Greek Koroneiki, more aromatic and peppery, made for the last pour: salads, bread, anything that just came off the stove.

What is extra virgin olive oil?

Extra virgin olive oil is olive oil at its purest. It’s made by pressing fresh olives without heat, chemicals, or refining, preserving the flavor, aroma, and natural antioxidants found in the fruit. It’s also the highest quality grade of olive oil, judged by strict standards for acidity and taste. Both Gratsi Olive Oils are 100% extra virgin, with nothing blended in from a lower grade.

What's the difference between olive oil and extra virgin olive oil?

It all comes down to how the oil is made. “Olive oil” generally refers to a blend of refined olive oil and virgin olive oil, while extra virgin olive oil is unrefined and extracted from olives using mechanical methods, without chemical refining. To earn the “extra virgin” grade, it must also meet strict standards for flavor, aroma, and acidity, including a free acidity level of no more than 0.8%. In other words, extra virgin is the highest quality grade, and that’s exactly what Gratsi uses: 100% extra virgin olive oil, never blended with refined oil.

Does olive oil go bad? How should I store it?

Olive oil doesn’t spoil, but it does gradually lose its freshness, flavor, and aroma when exposed to oxygen, light, and heat. That’s also why Gratsi comes in a box. As you pour, the bag collapses down, pushing the air out and keeping new oxygen from getting in. So your Gratsi Olive Oil stays fresh for longer. Keep the box somewhere cool and out of direct sunlight, a pantry or cupboard is perfect.

Why is Gratsi Olive Oil packed in a box instead of a bottle?

The bag inside the box collapses as you pour, keeping air and light out and helping protect the oil from oxidation. And at 3 liters, there’s plenty to cook generously with. It’s perfect for everyday sautéing, roasting, baking, and everything in between.

Where does Gratsi olive oil come from?

Greece. Our Cooking Oil is a blend of Greek olives, while our Finishing Oil is made from 100% Greek Koroneiki olives. Both are proudly Greek, with no oils from other countries blended in.
