Eggs with Fried Potatoes and Feta

My mother rarely made fried potatoes when we were growing up, so whenever my grandmother prepared this dish, it felt like a real treat. Crispy fried potatoes mixed with eggs and feta cheese were one of our favorite meals, and we looked forward to it every time she made it. Simple, humble ingredients transformed into something truly special. Even today, one bite brings back memories of gathering around my grandmother's table and enjoying what we considered a true delicacy.
STEP 1
Peel, wash, and cut the potatoes into thin slices. Heat plenty of extra virgin olive oil in a frying pan and fry the potatoes until lightly golden and cooked through.
STEP 2
Using a slotted spoon, transfer the fried potatoes to a second pan, allowing the excess oil to drain. The small amount of oil remaining on the potatoes will be enough for the next step.
STEP 3
In a bowl, add the eggs with a little salt and freshly ground black pepper.
STEP 4
Place the pan with the potatoes over medium heat, pour in the eggs and gently stir.
STEP 5
Add most of the crumbled feta cheese and gently stir until the eggs are cooked to your liking.
STEP 6
Sprinkle the remaining feta cheese over the top and finish with the chopped parsley.
Serve immediately and enjoy.
