Leslie's Kitchen: Spicy Shrimp Tacos

Think about juicy shrimp, all seasoned up, wrapped in warm tortillas, topped with a mix of textures and flavors that guarantee a seriously good time for your taste buds. If you're all about trying something deliciously new that mixes great ingredients with a bit of cleverness, then look no further than these Spicy Shrimp Tacos by Leslie Carney.

"What’s the SECRET to great tasting tacos?
All the condiments and sauces! I added onions sautéed in butter and avocado sauce, wow!"

Ingredients  (Serves 6):
• 2 pounds of shrimp, use frozen for ease. You can also use any kind of fish or even chicken!
• cilantro
• Cotija cheese
• 1 large onion
• 4 tablespoons butter
• 12 white corn or flour tortillas
• two avocados
• Half cup, sour cream, or full fat Greek yogurt
• One clove of garlic
• Salt to taste, at least 1 teaspoon
• Water if needed to thin sauce
• 4 limes - for garnish and avocado sauce
• avocado oil sautéing your shrimp

Spice:
• 2 tablespoons chili powder
• 2 tablespoons cumin
• 1 teaspoon onion powder
• 2 teaspoons of garlic powder
• 3 teaspoons of salt

Process:

  1. Start by making avocado sauce. In your blender add two avocados, sour cream or yogurt, the juice of one lime, garlic, and salt.
  2. Blend until the mixture is thin enough to pour over your tacos. Add a little water if needed.
  3. In a medium size sauce, pan, add butter and sauté onions until well done and golden.
  4. Slightly thaw out frozen shrimp, and pat dry with towels. Toss in a small bowl with the spice mix making sure that each shrimp is well coated.
  5. Heat a couple tablespoons of avocado oil in a large skillet over medium heat.
  6. Add shrimp to the hot pan and sauté until cooked or reheated. Sometimes the shrimp you buy frozen it’s already cooked.

Assembly:

  1. Add shrimp to warm tortillas. I usually heat mine in a skillet with a little butter.
  2. Top with buttery, onions, avocado sauce, cilantro, and cheese!
  3. Serve alongside a couple spoonfuls of black beans or refried beans.
  4. Garnish with fresh lime. You can also add cabbage to your tacos. I served my tacos with a regular, because I was out of cabbage!
