Chicken Soup from Scratch Recipe: Classic Italian Comfort Food

Ingredients

6-8 servings

  • 1

    whole 4–5 pound chicken

  • 1

    heaping tbsp kosher salt

  • 1

    tbsp apple cider vinegar

  • 2

    onions (peeled and diced)

  • 4

    cloves of garlic

  • 2

    celery sticks

  • 4

    carrots

  • 1

    bay leaf

  • spring water

  • fresh parsley for garnish

Preparation

STEP 1: Prep the Chicken

I start by asking the butcher to cut my chicken up into 8 pieces. If they'll remove the skin, have them do that too.

STEP 2: Rinse and Pot the Chicken

Wash the chicken pieces and place in Dutch oven. Make sure to wash your hands and sanitize the sink after washing/handling poultry, beef or fish.

STEP 3: Add Water and Vinegar

Cover the chicken pieces with spring water, apple cider vinegar, and salt.

STEP 4: Bring to a Boil

Bring to a boil and simmer for 30 minutes.

STEP 5: Prepare the Vegetables

While the chicken simmers dice onions, celery, bay leaf, and garlic cloves. I like to use a food processor to dice the onion and garlic. This saves time and prevents eye irritation.

STEP 6: Add to the Soup

Add diced onions and celery to your soup.

A hand slices carrots on a wooden cutting board with a knife. Chopped carrots are scattered on the board, and a bowl of chopped celery and a bench scraper are nearby. Garlic and celery pieces are also visible.

STEP 7: Remove the Chicken Breasts

After about 45 minutes, remove chicken breasts to prevent it from getting tough from over-cooking.

STEP 8: Remove the Chicken Pieces

Remove chicken pieces from the Dutch oven and allow to cool slightly.

STEP 9: Separate Meat from Bones

Remove the meat and set aside. Add the bones back to the pot and allow to simmer for a few hours.

STEP 10: Return Chicken to Pot

When you are ready to serve, remove the bones and add back the cut up chicken meat.

STEP 11: Add the Carrots

Wash and chop carrots. Add to soup pot and simmer until carrots are soft.

STEP 12: Cool the Soup

Remove soup from heat and allow to cool slightly.
