A simple, rustic, and spicy Greek dish where juicy vegetables melt into creamy feta—perfect for scooping with warm bread and sharing straight from the oven.
STEP 1
Preheat the oven to 200°C (390°F). In a small ovenproof dish, layer half of the tomatoes and peppers. Place the feta in the center and cover with the remaining vegetables.
STEP 2
Drizzle with olive oil and season with oregano, salt, and pepper. Scatter the kasseri (or gouda) around the feta and sprinkle paprika on top.
STEP 3
Cover with a lid or aluminum foil and bake for 30 minutes, until the cheese is melted, bubbly, and lightly golden.
STEP 4
Remove from the oven, mix gently with a fork, and serve hot.
Serve with a glass of Gratsi Red - its rich, velvety notes pair beautifully with the salty feta and sweet roasted peppers. Cheers to simple Greek comfort!
