Healthy Greek Yogurt & Honey Ice Cream

Ingredients

  • 17,6

    oz (500 g) Greek yogurt (5% or 10% fat for an even creamier texture)

  • 1/3

    cup (100 g) honey, depending on how sweet you like it

  • 1

    tsp vanilla extract

  • 1/3

    cup + 1 tbsp (100 ml) heavy cream or full-fat coconut milk (optional, for an even creamier texture)

  • Zest of ½ lemon

A refreshing, creamy homemade ice cream made without refined sugar and naturally sweetened with honey. It's incredibly easy to make, packed with protein, and perfect for hot summer days.

STEP 1

Place all the ingredients in a large bowl and beat for about 5 minutes using either a stand mixer or a hand mixer, until the mixture is smooth and fluffy.

STEP 2

Transfer the mixture to a freezer-safe container. Cover the surface directly with plastic wrap, making sure it touches the mixture to prevent ice crystals from forming.

STEP 3

Place the container in the freezer.

After 40 minutes, remove it from the freezer, peel back the plastic wrap, and whisk well to break up any ice crystals. Cover it again and return it to the freezer. Repeat this process every 40 minutes, 3 more times (4 times in total). Then freeze for an additional 5 hours, or until completely firm.

Before Serving
