Fried Zucchini - Taverna Style

Thin, crispy, and golden.

Ingredients

    zucchini (about 800 g), sliced into very thin rounds

  • 1

    cup (140 g) all-purpose flour

  • 1/2

    cup (80 g) fine semolina

  • Salt & black pepper

  • Olive oil, for frying

  • To Serve:

  • Tzatziki

  • Fresh lemon juice

Thin, crispy, and golden, just like the fried zucchini served in traditional Greek tavernas. Simple ingredients, but unbelievably delicious when paired with tzatziki and fresh lemon.

STEP 1

Slice the zucchini into very thin rounds using a sharp knife or mandoline. Place the zucchini slices in a colander set over a bowl.

STEP 2

Sprinkle generously with salt, toss well, and let them sit for about 1–2 hours until they release their excess moisture.

STEP 3

In a container with a lid, combine the flour, semolina, and black pepper. Add the zucchini slices, close the lid, and shake well until all the slices separate from one another and are evenly coated with the flour mixture.

STEP 4

Immediately fry the zucchini in olive oil over medium-high heat until golden and crispy on both sides. Transfer to a plate lined with paper towels to absorb the excess oil.

STEP 5

Serve warm with tzatziki and fresh lemon juice. And of course… alongside a cold glass of Gratsi White Wine for the perfect Greek summer table.
