Creamy Pistachio Pasta with Burrata & Crispy Speck

Creamy burrata, pistachios, and crispy speck come together in this simple yet elegant pasta that's perfect for any occasion.

    g pasta of choice, I used calamarata

  • 250

    g burrata

  • 100

    g sliced speck

  • 70

    g shelled pistachios

  • Handful of fresh basil

  • Extra virgin olive oil

  • Salt, to taste (pepper optional)

Creamy burrata, pistachios, and crispy speck come together in this simple yet elegant pasta that's perfect for any occasion. It feels restaurant-worthy but comes together with just a handful of quality ingredients and is ready in the time it takes to cook the pasta! 

Simple enough for a weeknight, but beautiful enough to serve when you're entertaining, proving that just a few good quality ingredients can go a long way.

STEP 1

Make the Burrata Cream: In a blender or food processor, combine the burrata, pistachios, basil, a pinch of salt and a generous drizzle of extra virgin olive oil. Blend until smooth and creamy. Set aside.

STEP 2

Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente. Be sure to reserve about 1 cup of the pasta water before draining.

STEP 3

Crisp the Speck: In the meantime, add the speck to a large pan over medium heat and cook until crispy. Remove and set aside on a paper towel, leaving the rendered fat in the pan.

STEP 4

Finish: Add the cooked pasta into the same pan used to crisp the speck. Pour the burrata mixture over the pasta and toss to coat. Loosen the sauce with reserved pasta water as needed. 

STEP 5

Serve: Top with the crispy speck, a sprinkle of chopped pistachios if desired, and a drizzle of extra virgin olive oil. Serve immediately.
