This quick and easy Calamari Gratinati al Forno is the perfect way to enjoy tender calamari with an irresistibly crispy, golden topping. Made with a simple mixture of breadcrumbs, garlic, parsley and olive oil, it comes together in minutes and bakes until beautifully golden and crunchy. It’s light, flavourful, and delicious served with a squeeze of fresh lemon.
My family enjoys this when we want a lighter alternative to fried calamari – Christmas Eve, special occasions, or just quick weeknight dinners. If you are looking for something new to add to your recipe rotation, this is it!
STEP 1
Prepare the Calamari:
If needed, clean the calamari by removing the head, innards, beak, and clear cartilage. Slice the bodies into ½-inch rings and keep the tentacles whole. Pat everything completely dry with paper towel to help the coating stick and ensure a crisp fry.
STEP 2
Coat:
In a large bowl, combine the rice flour, calamari, cherry tomatoes, Kalamata olives, fresh fennel, olive oil, salt and black pepper. Toss everything together until the calamari is lightly coated and all the ingredients are evenly combined.
STEP 3
Bake:
Bake in a preheated oven (425℉) for 25-30 minutes until crispy.
STEP 5
Serve:
Serve immediately with plenty of fresh lemon wedges while hot and crispy. Perfectly paired with a chilled glass of Gratsi White Wine.
