Greek-Style Baked Shrimp with Tomatoes, Feta, and Gratsi White

Ingredients

    pound (450 g) jumbo raw shrimp, peeled and deveined (fresh or defrosted from frozen)

    tablespoons (45 ml) extra virgin olive oil

    garlic cloves, grated or finely chopped

    teaspoon crushed red chili pepper

    pints (600 g) cherry tomatoes

    ounces (225 g) block feta cheese, cut into large cubes

    cup (15 g) chopped parsley

Season and Marinate the Shrimp

Preheat oven to 425°F (220°C).
In a bowl, toss the shrimp with 1 tablespoon of the olive oil, 1 garlic clove, oregano, chili pepper, black pepper, and salt.

Roast the Tomatoes with Olive Oil and Feta

Arrange the tomatoes in a large baking dish. Add the remaining 2 tablespoons olive oil and remaining garlic clove, a bit of Gratsi White Wine and toss until coated. Tuck the feta cubes in between the tomatoes.

Spread the Feta and Add the Wine

Bake for 15 minutes, until the tomatoes are bubbling and the cheese has softened. Spread the shrimp evenly over the tomatoes.

Add Shrimp and Bake Until Cooked

Return to the oven and bake for another 5–7 minutes, until the shrimp are opaque and cooked through.
