Greek olive oil is this dish's secret ingredient — learn why Greek olive oil has such a loyal following to appreciate what you're drizzling. Season and Marinate the Shrimp
Preheat oven to 425°F (220°C).
In a bowl, toss the shrimp with 1 tablespoon of the olive oil, 1 garlic clove, oregano, chili pepper, black pepper, and salt.
Roast the Tomatoes with Olive Oil and Feta
Arrange the tomatoes in a large baking dish. Add the remaining 2 tablespoons olive oil and remaining garlic clove, a bit of Gratsi White Wine and toss until coated. Tuck the feta cubes in between the tomatoes.
Spread the Feta and Add the Wine
Bake for 15 minutes, until the tomatoes are bubbling and the cheese has softened. Spread the shrimp evenly over the tomatoes.
Add Shrimp and Bake Until Cooked
Return to the oven and bake for another 5–7 minutes, until the shrimp are opaque and cooked through.
Garnish and Serve
Sprinkle with parsley and serve as is, or with pasta or rice.
