Poached pear in Gratsi Red Wine sauce

A simple yet elegant dessert, these red wine poached pears are infused with warm spices and vanilla, then served over creamy mascarpone.
STEP 1
In a large saucepan (large enough to hold the pears in a single layer), combine the Gratsi Red Wine, sugar, lemon peel, cinnamon sticks, cloves, and vanilla extract. Bring to a gentle simmer, stirring until the sugar has completely dissolved.
STEP 2
Carefully add the peeled pears to the saucepan, ensuring they are mostly submerged in the liquid. Simmer gently for 30–40 minutes, turning the pears occasionally, until they are tender and a knife slides easily into the thickest part.
Remove the pears from the saucepan and set aside.
STEP 3
Increase the heat and continue simmering the poaching liquid until it reduces to a rich, syrupy consistency that coats the back of a spoon, about 15–25 minutes (you can switch from saucepan to pan to reduce faster).
STEP 4
Spoon a generous dollop of mascarpone onto each serving plate. Place a poached pear on top and drizzle generously with the warm Gratsi Red Wine syrup. Finish with a sprinkle of chopped pistachios.
Tip: For even deeper flavour and a beautiful ruby colour, chill the pears overnight in the poaching liquid before reducing the syrup and serving.
