Melon Mint Spritz
Gratsi White Wine, Fresh Melon juice & Mint

There are combinations that surprise you, and this is one of them. Cool, crisp and quietly refreshing. Melon and mint together are something you don't see coming but immediately understand.
STEP 1
Make melon juice
Blend melon chunks until smooth, then strain through a fine mesh sieve pressing with a spoon. You need ¾ cup of liquid. Can be made up to 1 day ahead and refrigerated.
STEP 2
Build the glasses (or pitcher)
Combine the melon juice, Gratsi White Wine, lime juice, and honey. Stir, then top with club soda and mint. Clap the mint leaves between your palms to release the oils before adding.
STEP 3
Serve
Garnish with melon slices and a fresh mint sprig fanned out inside the glass.
Note:
The melon juice base can be made up to a day ahead and refrigerated, making this easy to batch for a pitcher: just combine the melon-juice, mint, lime, and wine in a pitcher and top with soda per glass when serving. Honeydew gives a pale green, delicate flavor; cantaloupe is sweeter and more golden – both are stunning. Watermelon juice is a great summer swap for a brighter pink version. Lime juice can be swapped for lemon if that's what you have.
