Roasted Fingerling Sweet Potatoes Recipe: Simple Italian Side

Instructions
TOTAL TIME
40 minutes4-6 servings
STEP 1: Preheat the Oven
Preheat oven to 400 degrees F.
STEP 2: Slice the Sweet Potatoes
Peel and slice sweet potatoes into thin strips.
STEP 3: Prepare the Baking Sheet
Place on parchment lined baking sheet
STEP 4: Mix the Herb Oil
In a small bowl, whish olive oil, chopped garlic, rosemary, salt and pepper together.
STEP 5: Coat and Toss
Pour over sweet potatoes and toss to coat.
STEP 6: Roast Until Tender
Roast in a 400 degree oven for about 30-40 minutes, flipping about 1/2 way through the cooking process.
STEP 7: Prepare the Maple Butter
While your potatoes cook, melt butter and maple syrup in a small pan.
STEP 8: Drizzle and Finish
When potatoes are done, remove and pour the maple butter over the top.
STEP 9: Garnish and Serve
Garnish with parsley if you'd like. Serve & Enjoy! These roasted potatoes are a versatile side for any table. Try them alongside Baked Fig Brie as a starter, or pair with Bruschetta with Baked Feta & Cherry Tomatoes for a vegetarian feast. Cheese Saganaki and Grilled Artichokes with Calabrian Chili Mayo round out the spread beautifully. Pour a glass of Gratsi White.
