This is one of those recipes that feels a little special but takes almost no effort. Creamy baked feta, sweet bursty cherry tomatoes, crispy garlic-rubbed bread… it’s the kind of dish you put in the middle of the table and suddenly everyone’s happy. Perfect for casual gatherings, cozy nights with a friend, and absolutely ideal with a chilled glass of Gratsi White Wine.
This bruschetta belongs in good company — a Spinach Bean Ricotta dip alongside it gives the spread real depth, while Gratsi Loaded Hummus fills the bowl on the other side of the board. Roasted Fingerling Sweet Potato adds warmth and sweetness to the table, and Taralli keep the crunchy snacking going between bites. Serve everything with a glass of Gratsi Sparkling White — it lifts all of it.
Step 1: Bake the Feta
Preheat the oven to 350°F (180°C). Place the feta cheese in the center of a baking pan. Scatter the cherry tomatoes around it.
Step 2: Season and Roast
Add 2 garlic cloves, drizzle with the olive oil, sprinkle with oregano and pepper and bake for 20-25 minutes, until the feta is soft and the tomatoes are juicy and slightly blistered.
Step 3: Toast the Baguette
Slice the baguette in half. Drizzle a little olive oil in a pan and toast the bread on both sides until golden.
Step 4: Rub with Garlic
Cut the remaining garlic clove in half and rub it over the hot baguette so the garlic flavor gently infuses the bread.
Step 5: Top and Serve
Spoon the baked feta onto the bread, top with the cherry tomatoes, drizzle with some of the pan juices, and finish with chopped parsley.
Serve warm, pass it around, pour the Gratsi White Wine and let the night unfold naturally.
