Preparation
Step 1: Mix the Ricotta Base
In a large mixing bowl, combine the strained ricotta, eggs, salt, pepper, and grated Parmigiano Reggiano until smooth and creamy.
Step 2: Fold in Flour and Parsley
Gradually fold in the 00 flour, baking powder, and chopped parsley until the mixture is well combined. If the mixture seems a bit too wet, add an extra tablespoon of flour as needed to help it hold together.
Step 3: Fry in Olive Oil
Heat extra virgin olive oil in a skillet over low heat. Drop spoonfuls (about 1–2 tablespoons each) of the ricotta mixture into the skillet, gently flattening each one with a spatula to form a disc.
Step 4: Cook Until Golden on Both Sides
Cook each frittatina for about 2-3 minutes on each side, or until golden and crispy, adjusting the heat as needed to avoid burning.
Step 5: Drain and Serve Warm
