    ripe tomatoes, chopped

  • 1/2

    red onion, finely chopped

  • 1/4

    cup Kalamata olives, chopped

  • 2

    cloves garlic, minced

  • 1/4

    cup crumbled feta cheese

  • 1

    tbsp balsamic vinegar

  • 1/2

    tsp dried oregano

  • Olive oil

  • Salt & pepper

  • Fresh basil, chopped

  • Extra olive oil for mixing

  • Splash of Gratsi Wine

The best part of this recipe is its simplicity—ripe tomatoes, savory olives, and creamy feta come together effortlessly, creating fresh flavors.

STEP 1

Prep the Bread: Slice the bread and place it on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, then bake at 375°F (190°C) for about 10 minutes or until golden and crispy.

STEP 2

Prepare the Tomatoes: While the bread is baking, chop the tomatoes and place them in a colander to drain excess juice.
