Chicken Thighs in Creamy Gratsi Rosé Wine Sauce

Serve the sauce underneath the chicken to keep that deliciously crispy skin intact.

    bone-in, skin-on chicken thighs (or boneless if that’s what you have)

  • 1

    tbsp olive oil

  • 2-3

    cloves garlic, minced

  • 1

    small onion, finely diced

  • 1

    cup (240 ml) Gratsi Rosé Wine 

  • 1/2

    cup (120 ml) chicken broth (or water)

  • 120

    ml cream

  • 1

    tsp fresh rosemary or thyme

  • 1

    tbsp butter (for a richer sauce)

  • Fresh parsley for garnish (optional)

  • flaky salt & pepper

  • Caramelised onion for garnish (optional)

In this recipe the chicken is seared until the skin is beautifully crisp, then finished in the oven while the flavorful pan sauce comes together with garlic, onion, herbs, chicken broth, and cream. Serve the sauce underneath the chicken to keep that deliciously crispy skin intact.

STEP 1

Season chicken well with salt and pepper. Sear skin-side down in nonstick pan with a little oil for 6–8 min, do not move it and let it alone until deeply golden (or until it unsticks by itself from the non stick pan).

STEP 2

Flip for 2 min, then transfer the chicken to a 200°C oven, skin side up. Roast until the thickest part is cooked, usually about 15–25 min, depending on size and thickness.

STEP 3

While it cooks, make your sauce in the same pan:

Remove excess fat, leaving around 1 tbsp. Sauté onion + garlic. Add the Gratsi Rosé Wine and thyme and reduce by about half. Add chicken broth and reduce a little. Lower heat and add the heavy cream. Simmer gently until creamy. Off heat and add cold butter.

STEP 4

Take the chicken out and rest 5 minutes. Spoon the cream sauce onto the plate and place the crispy chicken on top, skin side up.

STEP 5

Garnish with parsley and caramelised onion. Pairs well with mashed potatoes.

Important: Don’t pour the sauce over the skin—you want to preserve that crispiness.
