This colorful summer platter brings together some of my favorite Mediterranean flavors—sweet seasonal fruit, salty cheeses, crunchy nuts, honey and marmalade. Simple, fresh and perfect for sharing.
How to Cut the Watermelon
Cut the watermelon into large round slices, about 2–2.5 cm (¾–1 inch) thick. Cut each round in half, then cut each half into long triangular wedges, keeping the rind attached. Arrange the wedges in a long, slightly overlapping row through the center of the board, with the rind facing outward to show the beautiful green, white and red layers.
STEP 1
How to Assemble the Platter
- Start with the watermelon. Arrange the wedges through the center of the board to create the base of your platter.
- Add the feta cheese, cut into thick slices or rustic pieces.
- Add the graviera, cut into bite-sized cubes.
STEP 2
- Arrange the grapes around the watermelon and cheeses, using both green and dark grapes if available.
- Add the figs, some whole and some cut in half.
- Add the apricots, halved with the stones removed.
STEP 3
- Place the marmalade and honey in two small serving bowls on the board.
- Finish with the walnuts and almonds, scattering them into the remaining spaces. Add breadsticks or rusks and a few sprigs of fresh thyme.
To Serve
Serve the platter chilled or at room temperature with a glass of Gratsi Rosé Wine. Its fresh, fruity character is a lovely match for the sweetness of the watermelon, figs and apricots, while also pairing beautifully with the salty feta and graviera. It’s the perfect finishing touch for a relaxed summer gathering.
