This dish features tender rabbit braised with wild mushrooms, bell peppers, and a rich wine-based sauce for a comforting, flavorful meal. STEP 1: Prep the Rabbit
Cut and wash your rabbit into smaller pieces.
Dry well with paper towel and set aside.

STEP 2: Brown the Meat
Pre heat your pot and add your olive oil. Now add salt and pepper to your rabbit meat and begin to sear in hot oil. Turning them once , remove when both sides are lightly golden in color.
Place on the side for now.

STEP 3: Build the Sauce
In the same pot add your garlic and onions. Lower the heat and simmer slowly.
After add your bell peppers and mix well.
Let cook on low medium heat for a few minutes.
Now add your mushrooms and mix well. Let cook for another 5 minutes.
Salt and pepper to taste.
After add tomato paste, Gratsi Red and combine well.
At the end add your vine tomatoes. Mix well, pour your beef stock in and cover completely.
Bring it to a boil.

STEP 4: Braise Until Tender
Put your rabbit meat back in to your sauce and bring to a simmer.
Let cook for two hour min.
If it gets too dry add more beef stock.
Enjoy with a fresh slice of homemade bread!
