These healthy baked chickpea patties are a fresh take on a classic Mediterranean staple, full of flavor. And the best part? They’re baked, not fried so you get all the comfort, with none of the guilt. Packed with protein, fiber, and vibrant herbs, they’re perfect for a nourishing lunch or a light dinner, especially when paired with a generous spoonful of creamy homemade tzatziki.

STEP 1
Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.
STEP 2
In a large bowl, combine the mashed chickpeas, blended onions, eggs, cheese, parsley, mint, breadcrumbs, and olive oil.

STEP 3
Season generously with salt and pepper, and mix until well combined. The mixture should be moist but firm enough to shape.

Form small patties with your hands and arrange them on the prepared tray.

Lightly brush the tops with olive oil for a golden finish.

Bake for 25–30 minutes, flipping halfway through, until golden and slightly crisp on the outside.
