Ingredients

  • 1

    pound (500g) dried chickpeas (soaked in salted water for 8 hours, then drained, cooked, and mashed)

  • 2

    medium onions, blended

  • 2

    eggs

  • 1

    cup (200g) grated cheese (kefalotyri, graviera, or a mix)

  • 150g

    breadcrumbs

  • 1/4

    cup (60 ml) extra virgin olive oil

  • A handful of chopped fresh parsley

  • A handful of chopped fresh mint (dyosmos)

  • Salt & freshly ground pepper to taste

These healthy baked chickpea patties are a fresh take on a classic Mediterranean staple, full of flavor. And the best part? They’re baked, not fried so you get all the comfort, with none of the guilt. Packed with protein, fiber, and vibrant herbs, they’re perfect for a nourishing lunch or a light dinner, especially when paired with a generous spoonful of creamy homemade tzatziki.

Chickpeas are draining in a colander with a gold spoon, while more chickpeas are in a food processor. Fresh parsley, onion, olive oil, a jar labeled GRATSI, and other ingredients are arranged on a wooden surface.

STEP 1

Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.

STEP 2

In a large bowl, combine the mashed chickpeas, blended onions, eggs, cheese, parsley, mint, breadcrumbs, and olive oil.

STEP 3

Lightly brush the tops with olive oil for a golden finish.

Bake for 25–30 minutes, flipping halfway through, until golden and slightly crisp on the outside.
