STEP 1: Slice the Zucchini
Using a mandoline, slice the zucchinis into thin rounds to ensure even cooking and maximum crisp.

STEP 2: Fry until Golden
Heat sunflower or olive oil in a pan over medium-high heat. Once hot, fry the zucchini slices in batches until golden brown and crispy. Don’t overcrowd the pan.
STEP 3: Drain and Season
Transfer fried zucchini to a plate lined with paper towels. Season each batch with a pinch of salt while still warm.

STEP 4: Make the Dressing
In a small bowl, make the dressing: mix together extra virgin olive oil, white wine vinegar, chopped garlic, and fresh mint. Stir well to combine..
