Spinach & Feta Phyllo Triangles
Crispy on the outside, cheesy and savory on the inside—these spinach and feta triangles are a must-try.

These flaky, savory bites are a mouthwatering combination of rich flavors and perfect crunch!
STEP 1
Prepare the Spinach Mixture:
For fresh spinach: Wash, dry, and roughly chop it, then add it to a large bowl.
For frozen spinach: Defrost, squeeze out excess water, and add to the bowl.
Add the chopped fresh onions and massage the mixture with your hands to release and remove any extra moisture.
Add the mint, crumbled feta, grated graviera, minced garlic, and the beaten egg.
Season with salt (lightly, since the cheese is salty) and pepper. Mix until well combined.
STEP 2
Prepare the Phyllo Dough:
Lay the phyllo sheets flat on your work surface and cut them lengthwise into 3 equal strips.
Cover the sheets with a slightly damp kitchen towel to keep them from drying out.
Take one strip, brush it lightly with olive oil, and get ready to fill.
STEP 3
Assemble the Triangles:
Place 2 tablespoons of the fresh spinach filling at one end of the phyllo strip. (for frozen spinach mixture place 1 tablespoon)
Fold the corner over the filling to form a triangle. Continue folding the strip over itself, maintaining the triangular shape, until the filling is fully enclosed.
Brush the outside of the triangle with olive oil to seal and ensure crispiness during baking.
STEP 4
Bake the Triangles:
Preheat your oven to 180°C (350°F).
Line a baking sheet with parchment paper and place the triangles on it.
Bake for 25-30 minutes, or until golden brown and crispy.
STEP 5
Serve:
Allow the triangles to cool slightly before serving.
