TOTAL TIME

Step 1: Slice The Oranges
Wash and slice oranges (about 1/4 inch thick)
Step 2: Blanch The Oranges
Boil 2 cups water in a medium pan. Add orange and boil for about 2 minutes.
Step 3: Drain And Dry
Remove from water and set on drying rack.

Step 4: Candy The Oranges
Add the sugar and water back into the pan. Bring to a boil and add the orange slices. Boil until the mixture reduces and begins to foam about 45 to 50 minutes turning the oranges frequently.
Step 5: Cool The Candied Oranges
Remove oranges and set on drying rack. Refrigerate or allow to cool.
Step 6: Melt The Chocolate
When you can handle them, dip into melted chocolate. To melt the chocolate, chop chocolate into small pieces. Place in microwaveable bowl. Microwave for about 1.5 minutes, stopping to stir every 30 seconds. Remove from the microwave PRIOR completely melted. Finish stirring after you've removed from microwave.
Step 7: Dip And Finish
Dip oranges in the chocolate and place on parchment paper until dry. Sprinkle with your favorite salt! These are made for the end of a long dinner. Serve them after pollo al limone or arrosticini (Abruzzo lamb skewers) — the bitter peel and rich chocolate are a natural full stop to a savory meal. Build the rest of the spread around Greek potato salad with feta, schiacciata di patate, and Rita's stewed green beans. A glass of Gratsi Red alongside the chocolate is exactly where the evening should end.
