If you’re a zucchini lover, you will absolutely love this easy and flavorful zucchini pie! It’s a light yet satisfying dish, perfect as a main meal or a side. The combination of fresh zucchini, creamy feta, and golden semolina creates a deliciously rich texture with every bite.

STEP 1

Preheat the oven to 350°F (180°C).

STEP 2

Prepare the zucchini: Grate it and sprinkle with salt. Let it sit for a few minutes, then squeeze out excess moisture—either with your hands or using a clean kitchen towel or pillow (as shown in the video).

STEP 3

Mix the ingredients: In a large bowl, combine the grated zucchini, eggs, olive oil, semolina, milk, feta cheese, and pepper. Mix until well combined.

STEP 4

Transfer to a baking dish: Pour the mixture into a greased 13x9-inch (33x22 cm) baking dish, spreading it evenly.

STEP 5

Bake for approximately 50 minutes, or until golden brown and set.

STEP 6

Cool and serve: Let it cool slightly before slicing.
