Golden and perfectly crisp, these Frittatine di Ricotta offer a delicate balance of creamy ricotta and savory Parmigiano in every bite. Perfect for an aperitivo or snack, they’re sure to be a hit with both kids and adults!

Ingredients

  • 750g

    cow’s milk ricotta, well-strained

  • 3

    large eggs

  • 75g

     grated Parmigiano Reggiano

  • 160g

    00 flour

  • 1

    tbsp baking powder

  • Fresh parsley, finely chopped

  • Salt and pepper, to taste

  • Extra virgin olive oil, for frying

Preparation

Step 1

In a large mixing bowl, combine the strained ricotta, eggs, salt, pepper, and grated Parmigiano Reggiano until smooth and creamy.

Step 2

Gradually fold in the 00 flour, baking powder, and chopped parsley until the mixture is well combined. If the mixture seems a bit too wet, add an extra tablespoon of flour as needed to help it hold together.

Step 3

Heat extra virgin olive oil in a skillet over low heat. Drop spoonfuls (about 1–2 tablespoons each) of the ricotta mixture into the skillet, gently flattening each one with a spatula to form a disc.

Step 4

Cook each frittatina for about 2-3 minutes on each side, or until golden and crispy, adjusting the heat as needed to avoid burning.

Step 5

Transfer to a plate lined with paper towels to absorb any excess oil.

Serve these Frittatine di Ricotta warm, garnished with a sprinkle of parsley, and enjoy alongside your favorite glass of Gratsi wine. Buon appetito!
