    potatoes, peeled and diced

    large onion, roughly chopped

    tbsp cow butter

  • 1

    tbsp sweet paprika

  • Salt and pepper, to taste

  • For Serving:

  • 1

    tbsp extra virgin olive oil

  • Greek yogurt

  • Juice of half a lemon

  • Chopped parsley

  • Toasted bread

STEP 1

Cook the vegetables: In a large pot, boil the carrots, potatoes, onion, and garlic in the water until softened.
