    tbsp extra virgin olive oil

  • Greek yogurt

  • Juice of half a lemon

  • Chopped parsley

  • Toasted bread

 With its creamy texture and vibrant flavors, it’s a satisfying dish that combines wholesome ingredients with the richness of Greek yogurt for a unique twist. The Greek yogurt topping mixed with fresh lemon juice and olive oil brings a tangy, refreshing element that balances the soup’s richness. Garnishing with chopped parsley not only adds a burst of color but also a subtle, herby freshness. STEP 1

Cook the vegetables: In a large pot, boil the carrots, potatoes, onion, and garlic in the water until softened.

STEP 2

Blend: Use an immersion blender to purée the soup until smooth.
