STEP 1: Prep the Cabbage
Remove the outer leaves of the cabbage, wash well, and cut into medium-sized pieces.(Remove the hard core at the base of the cabbage)
STEP 2: Sauté the Onion
Heat the olive oil in a large pot over medium heat. Add the blended onion and sauté for 1–2 minutes, until soft and fragrant.
STEP 3: Add the Cabbage
Add the cabbage, stir well, and cook for about 10 minutes, until it wilts and reduces in volume.
STEP 4: Add Rice and Tomatoes
Add the washed rice and stir to coat. Pour in the blended tomatoes and the hot water to generously cover the ingredients.
STEP 5: Simmer Until Cooked
Season with salt and pepper. Close the lid and simmer over medium-low heat for about 20 minutes, until the rice is tender and the dish is juicy (not dry).
STEP 6: Finish with Butter and Lemon
Turn off the heat. Add the goat butter and lemon juice, and gently stir.
STEP 7: Serve
Serve warm, topped with fresh chopped parsley, a piece of feta cheese, and—if you wish—a glass of Gratsi Rose, which pairs beautifully with this comforting dish.
