A Buttery Rustic Pie Filled with Sweet Summer Apricots
This old-fashioned apricot pie is one of those simple desserts that celebrates summer at its best. Juicy apricots are gently tossed with brown sugar, cinnamon, and a splash of Gratsi White Wine, then baked between two layers of buttery grated dough until beautifully golden. The result is a tender, crumbly pie with a fragrant fruit filling that is just sweet enough to let the natural flavor of the apricots shine.
STEP 1
Wash, pit, and slice the apricots into medium-thick wedges (not too thin), so they hold their shape while baking.
In a bowl, combine the sliced apricots, cognac, brown sugar, and cinnamon. Gently toss everything together and set aside.
STEP 2
In another bowl, whisk together the warm melted butter and brown sugar until well combined. Add the egg and mix well.
In a separate bowl, combine the flour and baking powder. Sift them together through a fine-mesh sieve into the butter mixture.
STEP 3
Gradually mix everything together. Once the dough becomes too thick to stir, knead it gently by hand until you have a smooth, soft dough. Grease a 10-inch (26 cm) baking pan and lightly dust it with 1 tablespoon of flour.
STEP 4
Grate half of the dough directly into the prepared pan, spreading it evenly to form the base. Spoon the apricot filling evenly over the dough. If there are any juices left in the bowl, pour them over the apricots.
STEP 5
Grate the remaining dough evenly over the filling.
(If using a springform pan, wrap the bottom with aluminum foil to prevent any juices from leaking during baking.)
STEP 6
Bake in a preheated oven at 350°F (180°C)for 55–60 minutes, or until the top is beautifully golden. Allow the pie to cool completely, then dust generously with powdered sugar and a light sprinkle of cinnamon before serving.
