Ingredients

  • 5

    zucchinis, thinly sliced

  • 2

    cloves of garlic, finely chopped

  • 1

    shot of white wine vinegar

  • extra virgil olive oil

  • A handful of fresh mint

  • salt to taste

  • Frying oil (sunflower or olive oil)

Enjoy the flavors of Naples with Zucchine alla Scapece. This classic dish is light, crispy, and full of fresh, vibrant flavor.

STEP 1

Using a mandoline, slice the zucchinis into thin rounds to ensure even cooking and maximum crisp.

STEP 2

Heat sunflower or olive oil in a pan over medium-high heat. Once hot, fry the zucchini slices in batches until golden brown and crispy. Don’t overcrowd the pan.

STEP 3

Transfer fried zucchini to a plate lined with paper towels. Season each batch with a pinch of salt while still warm.

In a small bowl, make the dressing: mix together extra virgin olive oil, white wine vinegar, chopped garlic, and fresh mint. Stir well to combine..

STEP 5

In a serving dish, layer the fried zucchini and drizzle over the dressing. Let the zucchini sit and absorb the flavors for at least 15 minutes before serving.

STEP 6

Toss gently to coat. Serve at room temperature with some fresh, crispy bread!
