Wild Botanical Spritz

Gratsi Rosé Wine, Elderflower & Lemon

Ingredients

  • 25

    oz Gratsi Rosé White (≈ 1 bottle equivalent)

  • 1/2

    cup elderflower liqueur

  • 1/4

    cup fresh lemon juice (about 2 lemons)

  • 2

    cups club soda, chilled

  • Handful edible flowers

  • Honey or agave

  • Ice

Fresh, floral and made for warm evenings! Everything a summer glass should be. Light, refreshing and surprisingly simple to put together.

STEP 1

Prep the glass
Using a small brush or the back of a spoon, brush a thin layer of honey or agave on one side of the inside of the glass. Press edible flowers gently onto the honey so they stick. Optional: place the glass in the freezer for 5–10 minutes to set the flowers in place before building the drink.

STEP 2

Add ice
If not freezing the glass, fill it with ice right after pressing the flowers. This also holds them in place as you build.

STEP 3

Pour the base
Add the Gratsi Rosé Wine slowly over the ice, then pour the elderflower liqueur and lemon juice

STEP 4

Top with soda
Pour the club soda gently down the inside edge of the glass to preserve the bubbles.

STEP 5

Garnish and serve
Have fun with it! Let the botanicals shine or tuck a lemon round to the side of the glass and rest a sprig of thyme or lavender on top.

Note:

The elderflower liqueur is adjustable depending on how floral you want it. Add less for a subtle background note, or add more for a more forward, fragrant flavor. It also adds a touch of sweetness, so the more you add, the less you'll need any additional sweetener. For the garnish, you have options depending on how involved you want to get. For a simpler approach, just float a few edible flowers on top of the drink, no honey needed. Or skip flowers entirely and use a sprig of fresh thyme or lavender rested on the rim for an effortless, clean look that still feels intentional.
