The White Spritz: Gratsi White, Aperol & Olive Brine

    part Aperol

  • 1/2

    part olive brine

  • 3

    green olives

  • Splash of sparkling water

  • Ice

This is the kind of drink you make while the oven is warming and the olives are already out.
Nothing fancy. Just a glass in your hand and something salty to nibble.
It tastes like late afternoon light and the first jacket of the season. A little bitter. A little briny. Very Mediterranean.

Fill with Ice

Fill a wine glass with ice (if you like it colder).

Add Wine & Aperol

 Pour in the Gratsi White, then the Aperol and olive brine.

Top with Sparkling Water

Top with a splash of sparkling water. Stir gently, just once or twice.

Drop In the Olives

Drop in three olives and bring the glass to the table.
