This is the kind of drink you make while the oven is warming and the olives are already out.
Nothing fancy. Just a glass in your hand and something salty to nibble.
It tastes like late afternoon light and the first jacket of the season. A little bitter. A little briny. Very Mediterranean.
Made with Gratsi White, because that’s what’s already open on the counter. If you're building an aperitivo spread, our three Italian spritzes give you even more options to mix and match — or go deeper into the ritual with the story of the aperitivo.
Fill with Ice
Fill a wine glass with ice (if you like it colder).
Add Wine & Aperol
Pour in the Gratsi White, then the Aperol and olive brine.
Top with Sparkling Water
Top with a splash of sparkling water. Stir gently, just once or twice.
Drop In the Olives
Drop in three olives and bring the glass to the table.
Best enjoyed while standing in the kitchen, waiting for something to finish cooking.
