White Wine & Olive Oil Icing by ELIA

A sophisticated cake glaze recipe featuring Gratsi’s white wine and ELIA’s olive oil. Perfect for spoiling guests at your next Mediterranean-inspired dinner party.


• 2 cups (400g) powdered sugar (organic preferred)
• Tiny pinch of fine sea salt
• 2 tbs (30ml) Gratsi White, room temperature
• 1 tsp (5ml) ELIA Olive Oil (reserve from bottle before baking)


Combine all ingredients in a small glass mixing bowl and whisk until smooth.
Pour over a completely cooled ELIA Grecian Olive Oil cake and allow to slowly drizzle down the sides.

Optional: Once the glaze is set, garnish with almonds, apricot slices, rose petals or any Mediterranean-inspired botanical.

Store glazed cake in an airtight container at room temperature for up to 3 days.
