Step 1: Timing is Everything
The journey begins in olive orchards, where trees yield fruit once a year, typically between October and March. The timing of the harvest is crucial. Green olives, picked up early, produce a stronger, more bitter oil, while riper olives yield a milder, sweeter flavor. Farmers employ different harvesting methods:
- Hand-picking is common in small-scale operations, often involving family efforts with nets spread beneath the trees.
- Mechanical harvesting uses machines to shake olives off trees, essential for larger-scale production but controversial when conducted at night. Night harvesting was banned in Spain and Portugal in 2020 due to the ecological impact on migratory songbirds.
Once harvested, the olives must be processed swiftly to maintain freshness and avoid fermentation, which can spoil their flavor.
Step 2: Cleaning and Crushing
After harvest, olives head to the mill, where they're cleaned to remove leaves and debris. They are then crushed into a paste, including the pits and skins. Traditionally, large millstones handled this step, but modern producers often use steel rollers or hammer mills for efficiency. This process breaks down the olives and begins releasing the precious oil.
Step 3: Where the Magic Happens
The crushed olive paste is slowly stirred in a process called malaxation. This critical step allows tiny oil droplets to merge into larger ones, improving extraction. To preserve the oil’s natural antioxidants and fruity flavor, producers keep the temperature below 30°C, a technique known as cold pressing. This meticulous process is essential for producing high-quality extra virgin olive oil.
Step 4: Extracting the Oil
After malaxation, the oil is separated from the rest of the paste. While traditional methods relied on pressing, modern producers use centrifuges to spin the paste at high speeds, efficiently separating oil from water and solids.
The solid byproduct, called pomace, still contains some oil. While extra virgin and virgin olive oils are extracted mechanically, pomace oil requires chemical processes and is often used in cosmetics or industrial applications.
Step 5: Filtering and Bottling
Freshly extracted olive oil is either left unfiltered for a cloudy appearance and stronger flavor or filtered for a clearer, refined product. The oil is then stored in stainless steel tanks, shielded from light and oxygen to preserve its quality. Once bottled and labeled, it’s ready to grace tables around the world. Labels denote classifications such as extra virgin, virgin, or refined, reflecting the oil's quality and production methods.
Step 6: The Taste Test
To earn the coveted "extra virgin" designation, olive oil undergoes stringent sensory and chemical tests. Trained tasters evaluate their aroma, flavor, and texture, while lab tests measure acidity and antioxidant content. Oils that don’t meet the criteria are classified as virgin or refined oils.
Proper storage is vital to maintaining olive oil's freshness. Exposure to air, light, or heat can cause it to oxidize and turn rancid.
