Spinach, Bean & Ricotta Dip Recipe: Easy Italian Appetizer

Ingredients

    cup cherry or grape tomatoes, halved

  • 2

    cans cannellini beans, drained and rinsed

  • 1/2

    onion, chopped

  • 1

    bundle fresh spinach

  • 1

    heaping spoon of fresh ricotta

  • 1

    tsbp tomato paste

  • 1/4

    cup Gratsi White wine

  • 1/4

    cup water

  • Olive oil for sautéing

  • Salt and chili pepper, to taste

  • Bread for dipping

This is homestyle food that never disappoints. It’s the kind of dish you’d find served warm in small towns, alongside toasted bread and a glass of Gratsi Wine. STEP 1: Heat the Oil

Heat a generous drizzle of olive oil in a large pan over medium heat. Add the chopped onion and chili pepper, and sauté until the onion softens and turns fragrant.

STEP 2: Wilt the Spinach

Add the spinach and toss until just wilted.

STEP 3: Pour in the Wine

Pour in the Gratsi Wine and let it simmer for about a minute, allowing the alcohol to evaporate.

STEP 4: Add the Tomatoes

Stir in the cherry tomatoes, tomato paste, and a splash of water. Cook for a few minutes until the tomatoes begin to soften.

STEP 5: Season and Add the Beans

Season with salt and pepper, then add the cannellini beans. Let everything cook together for a few minutes so the flavors meld.

STEP 6: Stir in the Ricotta

Turn off the heat and gently stir in the ricotta until creamy and smooth.
