Ingredients

  • 1

    cup cherry or grape tomatoes, halved

  • 2

    cans cannellini beans, drained and rinsed

  • 1/2

    onion, chopped

  • 1

    bundle fresh spinach

  • 1

    heaping spoon of fresh ricotta

  • 1/4

    cup white wine

  • 1/4

    cup water

  • Olive oil for sautéing

  • Salt and chili pepper, to taste

  • Bread for dipping

This is homestyle food that never disappoints. It’s the kind of dish you’d find served warm in small towns, alongside toasted bread and a glass of Gratsi Wine.

STEP 1

Heat a generous drizzle of olive oil in a large pan over medium heat. Add the chopped onion and chili pepper, and sauté until the onion softens and turns fragrant.

Add the spinach and toss until just wilted.

Pour in the Gratsi Wine and let it simmer for about a minute, allowing the alcohol to evaporate.

STEP 4

Stir in the cherry tomatoes, tomato paste, and a splash of water. Cook for a few minutes until the tomatoes begin to soften.

STEP 5

Season with salt and pepper, then add the cannellini beans. Let everything cook together for a few minutes so the flavors meld.

STEP 6

Turn off the heat and gently stir in the ricotta until creamy and smooth.

Finish with a drizzle of olive oil and serve with toasted bread.
