Watermelon & Feta Salad with Gratsi Rosé Wine Reduction

The Gratsi Rosé Wine reduction gives the salad a floral depth while lemon adds the acidity needed to keep everything fresh.

Ingredients

  • For the Salad:

  • 4-5

    cups of watermelon

  • 150-170

    g feta cheese

  • 1/2

    small red onion, sliced paper-thin

  • 1/2

    cup fresh peppermint leaves

  • 1/4

    cup almonds, roughly chopped

  • A little fresh lemon zest

  • Salt and pepper, to taste

  • For the dressing:

  • 2

    tsp honey

  • 1-2

    tsp Dijon mustard

  • 1, 1/2

    tbsp fresh lemon juice

  • 3

    tbsp extra-virgin olive oil

  • Pinch of salt and black pepper

This is a fresh salad that balances sweet watermelon, salty feta, red onion, fresh peppermint, almonds, and a bright rosé wine reduction. The Gratsi Rosé Wine reduction gives the salad a floral depth while lemon adds the acidity needed to keep everything fresh.

STEP 1

Prepare the watermelon by cutting into small pieces. Make sure your watermelon pieces are cold and relatively dry. If there's a lot of liquid collecting at the bottom of the bowl, gently drain it. This is important because excess watermelon juice can dilute your Gratsi Rosé Wine dressing.

STEP 2

Break the feta with your hands into relatively chunky pieces and add it to the bowl. Slice the red onion as thinly as possible and add it to the bowl along with the chopped almonds and the fresh peppermint leaves.

STEP 3

Prepare the dressing by pouring the Gratsi Rosé Wine into a small saucepan. Add the honey and bring to a gentle simmer over medium heat. Let it simmer uncovered for approximately 10-15 minutes, until the wine has reduced to around 3 tablespoons. Don't boil it aggressively. You want a gentle reduction that becomes slightly concentrated and syrupy, not a thick caramel. Remove from the heat and allow it to cool completely. It’s important to let the reduction cool before making the dressing. Adding olive oil to a very hot reduction can affect the texture

STEP 4

Once the Gratsi Rosé Wine reduction has cooled, whisk it together with Dijon mustard, lemon juice, olive oil, salt and black pepper. Whisk until the dressing looks glossy and slightly emulsified. Taste it. You want a balance of fruity + tangy + slightly sweet + savory. If it's too sweet, add a tiny bit more lemon juice. If it's too sharp, add a tiny touch more honey.
