Rustic Mushroom and Cheese Crostoni

    large loaf of rustic Italian bread

  • 8 oz

    Champignon mushrooms

  • 6 oz

    Shiitake mushrooms

  • 8 oz

    White mushrooms

  • 16 oz

    Fresh mozzarella

  • 4 oz

    Italian Gorgonzola

  • 2 ½ tbsp

    olive oil for drizzling

  • A handful of fresh parsley, chopped

  • Salt & pepper to taste

This Rustic Mushroom and Cheese Crostoni is a crowd-pleaser that’s simple to make but tastes like something you’d find in a cozy Italian trattoria. The combination of sautéed mushrooms, creamy cheeses, and crispy bread creates a perfect harmony of textures and flavors. Whether you’re serving this as a casual appetizer or a featured dish at your next gathering, it’s sure to impress!

STEP 1

Start by preheating your oven to 400°F (200°C). Slice the bread in half lengthwise. Place the slices on a baking sheet and drizzle with a bit of olive oil. Pop them in the oven for about 8-10 minutes, or until the bread is toasted.

STEP 2

Before chopping your mushrooms, it’s important to clean them properly. Use a paper towel to gently wipe off any dirt from the surface. After cleaning, roughly chop the mushrooms. You want them to still have some texture, so no need to dice them too finely.

STEP 3

Heat a large pan over medium heat, and coat the bottom with a generous amount of olive oil. Once heated, toss in the mushrooms and sauté them until they’re tender and slightly browned, about 8-10 minutes. Season with salt and pepper to taste. Right before turning off the heat, add in some freshly chopped parsley.

STEP 4

Take your toasted bread slices and evenly distribute the sautéed mushrooms on top. Next, tear the fresh mozzarella and crumble the Gorgonzola over the mushrooms.

STEP 5

Set your oven to broil and slide the crostoni back in, just until the cheeses melt and begin to bubble. Be sure to watch closely, as this only takes about 2-3 minutes.

STEP 6

Finish by drizzling olive oil on top, and sprinkle with some fresh parsley for garnish. Slice the crostoni into small triangles, and serve immediately while the cheese is still warm and melty.
