Ravioli al Limone

Ingredients

  • Ingredients for the Ravioli Dough:

  • 2

    cups all-purpose flour

  • 1/2

    teaspoon salt

  • Ingredients for the Filling:

  • 1

    cup ricotta cheese

  • 1/2

    cup grated Parmesan or Romano cheese

  • 1/2

    cup finely chopped fresh spinach (optional)

  • Zest of 1 lemon

  • Salt and pepper to taste

  • Ingredients for the Lemon Sauce:

  • 1/2

    cup unsalted butter

  • 2

    garlic cloves (thinly sliced)

  • 1/2

    cup heavy cream

  • Zest of 1 lemon

  • Juice of 1 lemon

  • Salt and pepper to taste

  • Freshly grated Parmesan or Romano cheese (for garnish)

  • Fresh basil or parsley, chopped (for garnish)

Step 1

Make the Dough:
• In a large bowl, combine the flour and salt. Create a well in the center and crack the eggs into it.
• Using a fork, slowly incorporate the flour into the eggs until a dough forms.
• Transfer the dough to a floured surface and knead for about 15 minutes until smooth and elastic.
• Wrap the dough in plastic wrap and let it rest for at least 30-45 minutes.

Step 2

Prepare the Filling:
• In a medium bowl, combine the ricotta cheese, Parmesan or Romano cheese, chopped spinach (if using), salt, and pepper. Mix well until smooth and set aside.

Step 3

Roll Out the Dough:
• Divide the dough into two equal portions.
• On a floured surface, roll out one portion of the dough into a thin sheet (about 1/16 inch thick). Repeat with the second portion.
• Place small mounds of filling (about 1 teaspoon each) evenly spaced on one sheet of dough.
• Brush around the filling with water and place the second sheet of dough on top. Press around each mound to seal, ensuring there are no air pockets.
• Cut out the ravioli using a knife or a ravioli cutter. Press the edges firmly to seal.

Step 4

Cook the Ravioli:
• Bring a large pot of salted water to a boil.
• Gently add the ravioli to the boiling water and cook for 3-4 minutes or until they float to the top.
• Remove the ravioli with a slotted spoon and set aside.

Step 5

Prepare the Lemon Sauce:
• In a large skillet add in garlic, and melt the butter over medium heat.
• Add the heavy cream, lemon zest, and lemon juice. Stir well to combine.
• Season with salt and pepper to taste.
• Add the cooked ravioli to the skillet and toss gently to coat with the sauce.

Step 6

Serve:
• Transfer the ravioli to serving plates.
• Garnish with freshly grated Parmesan or Romano cheese and chopped fresh basil or parsley.
• Serve immediately and enjoy with your favorite Gratsi Wine!
