Peach Basil Spritz
Gratsi White Wine, Muddled peach & Fresh basil

There's something about the combination of peach and basil that just makes sense. Sweet meets fresh, soft meets aromatic and somehow it all comes together in the most effortless way.
STEP 1
Muddle in the shaker
Add 4 basil leaves, 4-5 peach slices, ½ tbsp lemon juice, and ½ tsp honey to a cocktail shaker. Muddle firmly 10–12 presses until the peach breaks down and basil is fragrant. Don't over-muddle or the basil turns bitter.
STEP 2
Add wine and shake
Pour in about 6 oz of Gratsi White Wine and a small handful of ice. Shake gently 4–5 times just to chill and combine.
STEP 3
Strain
Fill a serving glass with fresh ice. Fine-mesh strain the shaker contents over the ice, leaving a clean, jewel-toned peachy liquid.
STEP 4
Top and garnish
Add a generous splash of sparkling water along the inside edge of the glass. Garnish with a peach slice and stand a basil sprig upright inside the glass. Repeat for all 4 glasses
Note:
For a group, muddle a larger batch of peach and basil in the bottom of a pitcher, add the wine, stir, then fine-mesh strain into a second pitcher before topping with soda and pouring into individual glasses. White peaches are ideal but yellow peaches work great when white aren't in season. Fresh mint can sub for basil if you want a cooler, brighter flavor. A small splash of peach nectar or peach juice adds extra depth if your peaches aren't super ripe.
