Mini Puff Pastry Pizzas

These are so quick and easy to make and such a hit. I mean, who doesn’t love pizza? Top them with whatever your heart desires, or make a pizza party out of it and have everyone create their own. Either way, a glass of wine is a must.

Mini Puff Pastry Pizzas

Ingredients

  • 1 package

    (2 sheets) puff pastry dough, defrosted according to package directions 

  • 1

    egg, beaten, mixed with 1 tbsp of water

  • 2 cups

    shredded mozzarella cheese 

  • Sauce of choice (marinara, pesto, olive oil, etc.)

  • Toppings of choice (olives, sauteed mushrooms, pepperoni, sausage, prosciutto + arugula -- whatever you like!)

Pizza and wine – what’s not to love? These mini puff pastry pizzas are a total crowd pleaser, and a quick and easy way to enjoy pizza. You can make them bigger, smaller, or mini, and customize them with whatever toppings your heart desires. Instead of using traditional dough, we’re starting with store-bought puff pastry, which gives these a buttery taste and flaky texture. After par baking the pastry, we’ll spread them with a little olive oil or your favorite sauce (tomato sauce, pesto, tapenade – anything works). Next, add the toppings of your choice and bake until golden and melty. All that’s left to do is pour a glass of wine and enjoy this indulgent little snack.

STEP 1

Preheat your oven to 400 F. Line two baking sheets with parchment paper.

STEP 2

Remove your puff pastry from packaging and unroll. Using a pizza cutter or sharp paring knife, cut it into squares. You can do larger squares (divide each sheet into 4 squares) or smaller ones (divide each sheet into 16 squares). 

STEP 3

Score the puff pastry squares around the edge with a paring knife. To do this, lightly cut a small crust (about 1/4 inch) just on the surface – do not cut through. Brush the crust with egg wash. Bake for 10-15 minutes, or until puff pastry has puffed up and is just starting to brown – we are not cooking it all the way through right now. 

STEP 4

Remove puff pastry from the oven and start loading on your sauce, then cheese, then toppings. Return to the oven for another 5-10 minutes, until pastry is golden brown and cheese is melted. Add any toppings you'd like uncooked after cooking (arugula + prosciutto, for example). Serve warm.
