Leslie's Kitchen: Stuffed Pasta Shells

What I love about this dish is that there are so many variations to try! I added ground sausage however, you can leave that out and go with straight cheese or maybe add in some spinach. The possibilities are endless!

Ingredients:

• 24 jumbo pasta shells cooked according to manufacturers instructions.
• 15 ounces ricotta cheese
• 3 1/2 cups, mozzarella cheese, shredded and divided in two
• 2 1/2 teaspoons Italian seasoning
• Salt and pepper to taste
• One egg
• 1/2 cup grated Parmesan cheese
• About 3 cups or one jar of marinara sauce
• 1 pound ground pork, sausage, cooked

Instructions:

  1. Preheat oven to 375°F. Coat a 9 x 13“ pan with butter or oil.
  2. In a large skillet, brown pork sausage and set aside.
  3. Cook pasta shells according to manufacturers instructions.
  4. Spread half the marinara sauce on the bottom of the pan.
  5. Place the ricotta cheese, half the mozzarella cheese, Italian seasoning, salt, pepper, and Parmesan cheese, and sausage in a bowl. Stir to combine.
  6. Fill each pasta shell with ricotta cheese mixture and place in baking dish.
  7. Spoon the remaining marinara sauce over the shells and sprinkle with the remaining mozzarella cheese.
  8. Cover and bake for about 20 minutes. Uncover and bacon. Additional 10 minutes or until all the cheese is golden brown on top.
