Greek Beef Soup (Kreatosoupa)

Ingredients

  • 1.5

    pounds (800g) beef, cut into small pieces

  • 2.25

    liters (76 oz) water

  • 2

    onions, blended

  • 2-3

    carrots, sliced

  • 2

    potatoes, cut into small pieces

  • 2

    tomatoes, blended

  • 1

    bunch of celery (selino)

  • 6

    tbsp extra virgin olive oil

  • 2

    tbsp lemon juice 

  • Juice of 2 lemons

  • Salt and pepper to taste

On cold winter days or when you're feeling under the weather, this Greek beef soup is the perfect booster. Packed with nutrients and rich flavors, it provides warmth, comfort, and nourishment in every spoonful. This traditional recipe features tender beef, vibrant vegetables, and a touch of lemon for a refreshing finish. Enjoy it with a glass of Gratsi Red.

STEP 1

In a large pot, add the water and beef. Cook over low heat and skim off any scum that rises to the surface using a fine mesh strainer.
Season each with salt and pepper.
Add the carrots, potatoes, onion, blended tomatoes, and salt and pepper to the pot.

STEP 2

Add the bunch of celery and let everything simmer for another 30 minutes, then open the lid and stir in the extra virgin olive oil.

STEP 3

Cook for 5 more minutes, then add the lemon juice.

STEP 4

Leave it for 2 minutes and then take it off the heat. Remove the celery from the pot.
