Fried Eggplant Rolls with Feta Cheese
Crispy on the outside, creamy on the inside, these eggplant rolls with feta cheese are an amusingly delicious appetizer or side dish.

Whether enjoyed warm with a squeeze of lemon or served cold the next day, these rolls are guaranteed to impress. Pair them with a chilled glass of Gratsi white wine for a complete Mediterranean experience.
STEP 1
Prepare the eggplants:
- Preheat your oven to 180°C (350°F).
- Place the eggplant slices on a baking sheet lined with parchment paper.
- Season with salt and pepper, drizzle with a few drops of extra virgin olive oil, and massage the oil.. Flip the slices and repeat.
- Bake at 350 farenheit (180 celsius) for 20 minutes until softened. Remove from the oven and let them cool.
STEP 2
Make the feta mixture:
- In a bowl, mix the crumbled feta cheese, chopped onion, minced garlic, oregano, olive oil, vinegar, salt, and pepper. Combine well.
STEP 3
Assemble the rolls:
- Spread the feta mixture evenly over each eggplant slice.
- Roll each slice tightly and secure them if needed.
STEP 4
Coat the rolls:
- Prepare 3 plates: one with flour (seasoned with pepper), one with the whisked eggs, and one with breadcrumbs.
- Roll each eggplant roll in flour, shaking off the excess.
- Dip it in the egg mixture, then coat it in breadcrumbs.
STEP 5
Fry the rolls:
- Heat olive oil in a frying pan over medium heat.
- Fry the eggplant rolls for about 3 minutes on each side, or until golden and crispy.
- Place them on a plate lined with kitchen paper to absorb excess oil.
STEP 6
Serve:
- Enjoy the rolls immediately with a squeeze of fresh lemon juice. (Add lemon only to the ones you are about to eat.)
- The remaining rolls can also be enjoyed cold the next day with a touch of fresh lemon juice.
- Pair with a chilled glass of Gratsi White.
