Ingredients

    fillets of white fish

    lemon sliced

  • 4

    springs of Parsley

    cup of Cherry tomatoes

    French beans (8 per packet)

  • 1

    cup of Jasmine rice /3 cups of water

  • 2

    tablespoons of Basil pesto

  • Sliced Red onion

  • Parchment paper

  • Foil paper

Cartoccio night at Mama’s house is always a family event. She lays out the parchment paper and calls everyone over. the kids included, so we can all build our own little packets together. Each one gets a piece of white fish, a scoop of pesto jasmine rice, tomatoes, onions, parsley, lemon, and those cute little beans lined up just right.

The best part? Watching Mama go around to each packet with her magic finishing touches. A drizzle of olive oil, a squeeze of lemon, and her famous splash of Gratsi White“just for flavor”.
We fold them up, pop them in the oven, and before long the whole kitchen smells like a seaside feast. It’s delicious, it’s wholesome, and honestly… it’s one of the most fun meals to make as a family.

Who wants to come over and make one with us?

STEP 1

Preheat the oven to 400 degrees.
Cook your rice and mix your basil pesto in. Salt and pepper to taste.

STEP 2

Prepare your sheet pan to accommodate all your packets.
Prepare your foil with parchment paper on top.

STEP 3

Place your fish down with rice on the side. Add the rest of ingredients on top of fish and season with salt and pepper. Drizzle olive oil and add lemon juice and parsley on your fish.

STEP 4

Grab both sides of your parchment paper and pinch closed, then fold and roll into a packet. Place packets onto baking sheet.
Cook for 45 minutes.
