Classic Greek Salad (Horiatiki)

Ingredients

  • 2

    ripe tomatoes, cut into wedges

  • 2

    cucumbers, peeled and sliced

  • 1

    red onion, thinly sliced

  • 1

    green bell pepper, sliced into rings

  • A handful of Kalamon (Kalamata) olives

  • A few teaspoons of capers (optional but delicious)

  • A thick slice of feta cheese (or crumbled if you prefer)

  • Extra virgin olive oil – generous drizzle

  • Sea salt, to taste

Whether you serve it as a side dish or a light main on a hot summer day, this classic is always a winner. It’s incredibly easy to make, and the secret lies in one thing only: the quality of your ingredients. Let’s make it!

STEP 1

Prep your veggies:

Cut 2 ripe tomatoes into wedges.

Peel and slice 2 cucumbers.

Thinly slice 1 red onion.

Slice 1 green bell pepper into rings.

STEP 2

Assemble the salad:

Add tomatoes, cucumbers, onion, and bell pepper to a large bowl.

Toss in a handful of Kalamata olives.

Add a few teaspoons of capers (optional but great).

STEP 3

Top with feta: Place a thick slice of feta on top (or crumble it if you prefer).
Finish with olive oil + salt: Drizzle generously with extra virgin olive oil.Sprinkle with sea salt to taste.
