Easy, Healthy & Delicious Chicken Pie with Feta

Ingredients

  • 2

    onions, blended

  • 1

    red bell pepper, blended

  • 2

    carrots, blended

  • 1

    fresh onion, sliced

  • 1, 1/2

    lbs (700g) chicken breasts, cooked and shredded

  • 7

    tbsp extra virgin olive oil

  • 3

    tbsp (50ml) Gratsi White

  • 3

    eggs

  • 1

    cup (240g) Greek yogurt

  • 1, 1/4

    cups (120g) oats

  • 12

    oz (350g) feta cheese, crumbled

  • Salt and pepper to taste

  • Sesame seeds, for topping

This chicken pie is light, creamy, and full of Mediterranean flavor — the perfect balance of comfort and nutrition. Blended vegetables keep it moist and healthy, while feta cheese adds that irresistible salty touch. Simple, hearty, and perfect for a family meal or easy lunch throughout the week.

STEP 1

In a large pan, heat the olive oil and sauté the sliced onion until soft.

Add the blended onions, red pepper, and carrots. Sauté for a few minutes until the vegetables soften.

Pour in the white wine and let it cook for about 3 minutes to evaporate the alcohol.

STEP 4

Add the shredded chicken, season with salt and pepper, and mix well. Set aside to cool slightly.

In a large bowl, whisk the eggs, then add the Greek yogurt and mix until smooth.

Add the chicken mixture, stir well, then add the oats and feta. Mix until everything is combined.

STEP 7

Pour the mixture into a baking pan (10x12 inches / 23x33 cm). Sprinkle sesame seeds on top.

STEP 8

Bake at 350°F (180°C) in convection mode for 30 minutes, until golden on top.

Serve warm with a glass of Gratsi White — its crisp, floral notes pair beautifully with the creamy feta and savory chicken.
