Braised Rabbit with Wild Mushrooms

Ingredients

    lb rabbit

  • 5

    tablespoons of olive oil

  • 150

    g shiitake mushrooms

  • 200

    g oyster mushrooms

  • 1

    of each green/yellow bell pepper/ julienne cut

  • 1/2

    Spanish onion/ diced small

  • 2

    cloves of garlic/ minced

  • 4

    oz tomato paste

  • 8

    oz Gratsi Red

  • 32

    oz beef stock

  • 3

    ripe vine tomatoes

This dish features tender rabbit braised with wild mushrooms, bell peppers, and a rich wine-based sauce for a comforting, flavorful meal.

A variety of fresh ingredients on a wooden surface, including tomatoes, mushrooms, bell peppers, onion, rabbit meat, spices, a glass of red wine, and a bowl of oyster mushrooms.

STEP 1

Cut and wash your rabbit into smaller pieces.
Dry well with paper towel and set aside.

Six wooden bowls on a cutting board, each containing a different ingredient: sliced yellow and green bell peppers, sliced mushrooms, tomato paste, chopped onions and garlic, diced tomatoes, and oyster mushrooms.

STEP 2

Pre heat your pot and add your olive oil. Now add salt and pepper to your rabbit meat and begin to sear in hot oil. Turning them once , remove when both sides are lightly golden in color.
Place on the side for now.

STEP 3

In the same pot add your garlic and onions. Lower the heat and simmer slowly.
After add your bell peppers and mix well.
Let cook on low medium heat for a few minutes.
Now add your mushrooms and mix well. Let cook for another 5 minutes.
Salt and pepper to taste.
After add tomato paste, Gratsi Red and combine well.
At the end add your vine tomatoes. Mix well, pour your beef stock in and cover completely.
Bring it to a boil.

STEP 4

Put your rabbit meat back in to your sauce and bring to a simmer.
Let cook for two hour min.
If it gets too dry add more beef stock.
Enjoy with a fresh slice of homemade bread!
