    cup Kalamata olives

    tbsp red wine vinegar

     tsp chili flakes (optional)

    bay leaves

    tbsp olive oil

  • 1/2

  • Salt and pepper, to taste

The Story

This classic dish is all about tender salted cod, hearty potatoes, and a rich tomato sauce simmered to perfection. It’s a labor of love that takes a few days to prepare, but the end result is so worth it especially when shared with family. STEP 1: Prep the Cod

Prep the Cod: Soak the cod in cold water for 3 days, changing the water twice daily. Rinse one last time, cut into pieces, and set aside.

STEP 2: Build the Base

Build the Base: In a pot, heat olive oil over medium heat. Sauté garlic and onions until fragrant, then add potatoes and cook for 2 minutes.

STEP 3: Simmer and Combine

Simmer: Add tomato purée, bay leaves, chili flakes, oregano, salt, pepper, and Gratsi rosé. Add enough water to cover and simmer until potatoes are tender.

STEP 4: Finish with Fish and Olives

Finish: Add cod and olives, cooking gently until the fish is warmed through. Adjust consistency with water if needed.
